1 unsmoked, undyed Haddock Fillet (frozen or fresh)
4-5 Broccoli Florets
2 medium Carrots
1 medium onion
2 medium sweet potatoes (peeled)
Organic whole milk
1 tsp parsleyMethod
Chop the carrots, onion, sweet potatoes and add to a medium saucepan. Leave to boil for around 10 minutes, add the broccoli, leave for another 15 minutes to boil away.
Meanwhile, mix the milk with 1/2 tsp of parsley. Put the haddock on a microwaveable plate with 2-3 tbsp of the parsley infused milk, cover with cling film and cook on a high heat in the microwave for 4 minutes.
Tip: A way to tell if the fish is properly cooked, if there is a white lumpy pulp that has emerged from the fish during cooking, its ready!
Drain the water from the saucepan, but keep a little bit of water just in case you have to add more liquid to the fish pie!
Add all of the ingredients (veg, fish and rest of parsley milk) to the blender and pulse to smash up the ingredients, unless your super paranoid about choking like me! In that case just blend it more and add slightly more water to give it a pastier consistency.
For freezing, wait to cool and scoop with a small spoon into the ice cube trays! They are fresh and ready for defrosting whenever you wish!

I really loved this fish pie!! It was delicious! The first time I ate it I gobbled it all up, so fast!! I already loved sweet potato before, but I think that just helped me to love it even more! The new flavour and texture of the haddock and parsley with my favourite creamy sweet potato mash just made the whole thing delicious…but if my food doesn’t have a little hint of sweetness I tend to refuse it after 3 mouthfuls! So on the second time of eating it I thought I would do exactly that…now Mommy adds a coconut and banana milk cube, then it tastes perfect for my little tum! YUM YUM!!
Variations- You can see I have stuck to creamy fruits and berries, this is because after experimenting with the apple and pear, I found it can take away from the creamy taste of the sweet potato and my mission is to add to that creaminess! He loves each one of these combinations.
